Gum Drop Bars

4 Eggs
2 Cups Brown Sugar
1 Tbsp Cold Water
2 Cup Flour
1/4 tsp Cinnamon
1/2 Cup Nuts
1 lb. Spice Gum Drops

40-50 minutes at 350 degrees

Cut into squares, shake in Powdered Sugar after cool and serve.

Coffee Cake Blueberry Streusel Mix

Coffee Cake Mix Thoroughly:
3/4 Cup Sugar
1/4 Cup Soft Shortening
1 Egg

Stir in: 1/2 Cup Milk

Sift together and stir in:
1 1/2 Cup sifted Flour
2 tsp Baking Powder
1/2 tsp Salt

In a 9 in square pan greased and floured pan, put half the batter. Sprinkle half the streusel mixture. Put in rest of batter and sprinkle the rest of streusel over top.

Streusel Mixture
1/2 Cup Brown Sugar
2 Tbsp Flour
2 Tbsp Cinnamon
2 Tbsp melted Butter or Oleo
1/2 Cup Chopped Nuts
Add Blueberries or Apples as you like

Bake 25-30 Minutes at 375 Degrees.

Cheese Cake

3 8 oz packages Cream Cheese
1 Cup Sugar
3 Eggs
1/2 tsp Vanilla

Place cheese in electric beater and beat well. Add sugar and beat in 1 egg at a time, add vanilla last. Bake 375 for 30 minutes.

Topping:
1 pint of Sour Cream
3 Tbsp Sugar
1/2 tsp vanilla

Whip Cream lightly, add sugar and vanilla. Pour over baked cake... Bake in 500 degrees for 5 minutes. Cool and place in refrigerator.

Pumpkin Cookies

1 1/4 Cup Sugar
1/2 Cup Shortening
1 Egg
1/2 tsp Salt
1 tsp Cinnamon
1 tsp Baking Soda
2 Cup Flour
1 Cup Strained Pumpkin
1 Cup Raisins
1/2 Cup Pecans

Cream sugar and shortening, beat in eggs, sift dry ingredients, add to creamed mixture with pumpkin. Beat Thoroughly. Fold In, raisins and nuts. Drop by teaspoon on cookie sheet. Bake 350 degrees for 12-15 minutes.

No Cook Marshmallow Frosting

1/4 tsp Salt
2 Egg Whites
1/4 Cup Sugar
3/4 Karo Syrup -- Red Label
1 1/4 tsp Vanilla

Add salt to egg whites and beat with beater until mixture forms soft peaks, gradually add sugar, 1 tbsp at a time, beating until smooth and glossy. Slowly add Karo Syrup beating after each addition. Fold in vanilla.

Catcup

1 Gallon Strain Tomatoes
2 Small Onions
1 Pint Vinegar
1 1/2 lb. Brown Sugar
1 1/2 Tbsp Salt
1 Tbsp Cinnamon
1 1/2 Tbsp Ginger
1/2 tsp Red Pepper
Boil and Can.

Cold Slaw Dressing

1/4 Cup Water
1 Cup Vinegar
1 Cup Sugar
1 Tbsp Salt
1 tsp Celery Seed
1 tsp Mustard Seed
~ little wish bone oil (?)
Boil 3 Minutes

14 Day Crock Sweet Pickles





Into a clean Stone Jar (Crock) or Barrel put 2 Gallons of Cucumbers (Pickles). Dissolve 2 Cups of Salt in 1 Gallon of boiling water. Pour while hot over the pickles. Then cover and let stand 1 Week.

On the 8th Day (now we know what God did) Drain the crock and pour a new Gallon of boiling water over the pickles and let stand 24 hours.

On the 9th Day. Drain and Pour 1 Gallon of boiling water with 1 Tbsp of Powdered Alum over pickles and let stand 24 hours.

On the 10th Day drain again, pour 1 gallon boiling water and let stand 24 hours, then drain.

For the Pickling Mixture:
Combine 5 pints of Vinegar, boiling hot with 6 cups of Sugar, 1/2 oz of celery seed and 1 oz of cinnamon stick. Pour this over the pickles, drain off for 3 mornings, reheating it and adding a1 cup of sugar each morning. With third and last morning, heating, pack pickles in sterilized jars, pour hot liquid over them and seal.

Sounds like a lot of work to me...

Terminology

Oleo = Margarine or Butter

Scaled Milk = Milk over boiled on stove top

Sift = the purchase of a sifter to make ingredients fine in texture. May not be necessary to get the same outcome.

Shortening/part butter = Crisco with Butter

Catcup = Polish Ketchup, it is referenced in recipes... yes there is a separate recipe to follow

Barbecue... Maybe Sloppy Joes

1 1/2 lb. Hamburger
1 Small Onion

Fry together until browned. Put a little water in pan with meat.

1 bottle of Catcup (See recipe)
1 Tbsp Chili Powder
1 Tbsp Brown Sugar
1 Tbsp Vinegar
Some chopped Celery

Cook till thick.

Snickerdoodles

Mix Thoroughly:
1 Cup soft shortening (part butter)
1 1/2 Cup Sugar
2 Eggs

Sift Together:
2 3/4 Cup Flour
2 tsp Cream of Tartar
1 tsp Baking Soda
1/4 tsp Salt

Roll into balls the size of small walnuts. Roll into mixture of 2 Tbsp of Sugar and 2 Tbsp of Cinnamon. Place 2 inches apart on un-greased cookie sheet. Bake until lightly brown but still soft. 400 Degrees about 8-10 minutes.

Christmas Cookies --- Janet

2 Cup Sugar
1/2 Cup Butter
3 Eggs
1 Cup Sour Cream
4 Cup Flour
2 tsp Baking Powder
1 1/2 tsp Baking Soda
1 tsp Salt
2 tsp Vanilla

Mix. Roll. Cut Out. Bake 375 Degrees. 9-12 minutes.

Ginger Cookies

1 1/2 Cup Crisco
2 Cup Sugar
1/2 Cup Molasses
2 Eggs
4 Cup Flour
1/2 tsp Salt
2 tsp Baking Soda
2 tsp Baking Powder
1/2 tsp Cloves
2 tsp Ginger
2 tsp Cinnamon
1 tsp Nutmeg
1/2 tsp All Spice

Refrigerate for 1 hour. Roll Small balls and then roll balls in sugar. 2 inches apart on cookie sheet. Bake 375 degrees 8-10 minutes.

Freezer Rhubarb Jam

4 Cups Rhubarb
4 Cups Sugar
1 Cup Crushed Pineapple
1 Package 6 oz Strawberry Jello

Cook rhubarb, sugar and pineapple for 20 minutes. Add jello, stir well to dissolve. Pour into freezer containers. Freeze.

Ham Casserole

1 Cup Ham Cooked and Cubed
1 Cup Minute Rice
1 Can Cream of Celery Soup
1/4 Cup Water
2 Tbsp Butter

Combine all ingredients in casserole dish. Cover. Bake 45 minutes at 350 degrees.

Rhubarb Sauce

Boil until Thick:
2 Cup Water
1 Cup Sugar
2 Tbsp Tapioca

Add 4 or 5 Cups of Rhubarb and 1 small box of Strawberry Jello. Stir Well and Let Cool.

Coconut Cream Pie

2 Cup Milk
3/4 Cup Sugar
1/2 Cup Bisquick Mix
4 Eggs
1/4 Cup Margarine
1 1/2 tsp vanilla
1 Cup Coconut Angel Flake

Combine milk, sugar and Bisquick mix, eggs, vanilla, put in blender on low speed for 3 minutes. Pour into 9 inch greased pan let stand 5 minutes then sprinkle with coconut. Bake for 40 minutes at 350 degrees.

Tomato Soup

2 Cups Milk
2 Tbsp Butter
3 Tbsp Flour
1 Tbsp Minced Onion
2 tsp Sugar
2 Cup Tomato Juice
1/2 tsp Salt

Measure milk into pan, set aside. Melt butter, add flour, salt and pepper, minced onion and sugar. Add tomato juice and cook until mixture thickens. Using whisk spoon milk into mixture. Heat until ready to eat.

Dutch Topping for Apple Pie

1/2 Cup Sugar
3/4 Cup Flour
1/3 Cups Margarine

Mix

Bread Pudding

2 Cup Dry Bread Crumbs
4 Cup Scalded Milk
3/4 Cup Sugar
1 Tbsp melted Butter
1/2 tsp Cinnamon
1/2 Cup Raisins
1/4 tsp salt
1/4 tsp nutmeg
4 slightly beaten eggs.
1 tsp vanilla

Soak bread in milk for 5 minutes. Add butter, sugar, salt. Pour slowly over eggs. Add vanilla and cinnamon mix well. Pour into greased 1 1/2 quart baking dish. Bake in a pan of hot water at 350 degrees for about 1 hour or until firm.

Rich and Creamy Broccoli Soup

1 Cup Water
1 10 oz package of frozen chopped Broccoli
2 Cups Milk
2 Cups Velveeta or processed Cheese cubed
2 Chicken Bouillon Cubes
1/2 Cup Flour
1 Cup Half and Half Cream

In large sauce pan cook broccoli in one cup of water. Add bouillon cubes, don't drain. Put milk, cheese and flour into blender and process until smooth. Add mixture to broccoli. Add half and half cream. Cook, stirring frequently over medium heat until hot and mixture thickens. Garnish with Croutons.

Quick Broccoli Soup

2 10 oz packages of frozen broccoli or 1 bunch of broccoli
1 Soup Can Full of Water in which the broccoli has been cooked
2 Cans condensed Cream of Celery Soup
1 Soup Can full of Milk
6-8 oz processed cheese (Velveeta cubed)
Chopped Ham Optional

Cook and Serve

Cottage Cheese Pancakes

1 Cup Cottage Cheese (large curd)
1/2 Cup Flour
1 Egg
Salt and Pepper and Chives.

Fry.

Glaze --- Strawberry Pie Filling

1 1/2 Water
3/4 Cup Sugar
2 Tbsp. Corn Starch

Cook till thick. Add small box of Strawberry Jello. Cool and Pour over Fruit (Strawberry's)

Modify for other fruits.

Pie Crust

1 1/3 Cup Sifted Flour
1/2 tsp Salt
1/2 Cup Crisco
2-3 Tbsp cold Water

That's it... there is no more on the card. My Guess: Mix it together and press in the pan. Bake until brown, say 20 minutes to start at 350 degrees.

Zucchini Bars with Cinnamon Frosting

3/4 Cup Oleo
1/2 Cup packed Brown Sugar
1/2 Cup White Sugar
2 Eggs
1 3/4 Cup Flour
1 1/2 tsp Baking Powder
2 Cups shredded unpeeled zucchini
1 Cup Coconut
3/4 Cup Nuts

Cream Oleo and Sugar until fluffy. Add eggs and vanilla (yes there is no vanilla in the recipe, but this is what the card says...so my guess is 1 tsp vanilla) Mix. Stir in flour, baking powder, zucchini, coconut, and nuts. Spread on greased pan (15x10) Bake 350 degrees for 40 minutes.

Cinnamon Frosting
1 Cup Powder Sugar
2 1/2 Tbsp Milk
1 1/2 Tbsp Oleo
1 tsp Vanilla
1/2 tsp Cinnamon

Mix together and put on cake when hot!

Broccoli Rice Casserole

1/2 Cup Margarine (1 Stick)
1 Onion chopped
1 Can Cream of Mushroom Soup
1 8 oz Jar of Cheez Whiz
1 1/4 Cup Minute Rice uncooked
2 10 oz packages or 1 20 oz bag of chopped frozen broccoli
1/4 Cup Water

Cook onion in margarine until tender. Add remaining and stir over low heat until broccoli is broken apart. Place in 9x13 baking dish, bake at 350 degrees for 30-40 minutes.

Strawberry Rhubarb Upside Down Cake

1 Cup Sugar
3 Cup Cut Rhubarb
1 small package Strawberry Jello
3 Cups small Marshmallows
Grease loaf pan with margarine.
Mix Any Cake Mix and Pour over top.

Bake 350 degrees for 1 hour

Dump Cake

9x13 greased pan
Spread large can of Cherry Pie Filling
1 Can Crushed Pineapple
Sprinkle with Yellow Cake Mix
Cover with 1/2 Cup of Melted Butter
Sprinkle with 1/2 Cup Nuts

Bake 350 degrees. 50-60 Minutes

Clam Chowder

1 Cup uncooked Potato cubes
1 Cup sliced Carrots
3/4 Cup chopped Onion
1/3 Cup sliced Celery
8 Peppercorns
1 Bay Leaf
Cold Water
1 Package 12oz frozen fillet of cod or can of clam
1/4 Cup Margarine
1/4 Cup Flour
2 tsp salt
3 1/2 Cup Skim Milk
some chopped Parsley

Heat potatoes, carrots, onion, celery, peppercorns, and bay leaf, cold water to cover in large sauce pan to a boil. Reduce head and simmer for 15 minutes. Add fish, simmer 15 minutes or until fish flakes easily with a fork. Remove fish, vegetables and seasonings. Boil broth until reduced to 1 cup. Meanwhile discard peppercorn and bay leaf. Break fish into chunks, melt margarine, blend in flour and salt. Stir in skim milk and broth. Cook over medium heat, stirring constantly until mixture comes too boil. Add fish and vegetables. Heat thru and Serve.

Pumpkin Pie

2 Cups Cooked Pumpkin
1 Cup Sugar
3 Eggs
1 1/2 Cup Milk
1 tsp salt
1 1/4 tsp cinnamon
1/4 tsp cloves

My Guess.... Mix, place in pie shell and bake 350 degrees for 20 minutes... I could be wrong though!

Cream of Broccoli Soup

1 Cup diced Potatoes
1/2 Cup diced Carrots
1 stalk of Celery
1/4 Cup diced Onion
10 oz box or bunch of broccoli cut up
2 Tbsp Parsley Flakes
1 Chicken Bouillon Cube
Water only to cover. Simmer until Done.

1 1/2 Cup Mike thicken with Tbsp flour.
8oz Velveeta Cheese melt all together, salt and pepper to taste

Meat Balls

1 lb. Veal and Pork Ground
1 Egg
10 Crackers Crushed-- if you don't have crackers you can crumble 3/4 Cup bread
1/2 Cup Milk
1 small chopped Onion
1/4 tsp Marjoram

Roll in Balls, Brown on each side then put in oven for 1 hour on 325 degrees.

Zucchini Bread

3 Eggs
1 Cup Oil
2 Cup Sugar
2 tsp Vanilla

Beat.

Fold in:
2 cup graded Zucchini
8 oz of crushed Pineapple
3 Cup Flour
2 tsp Baking Soda
1/2 tsp Baking Powder
1 1/2 tsp cinnamon
1 tsp salt
1 Cup Nuts

Bake 1 hour-325 degrees
Yield: 2 loafs

Pickel Red Beets

1 Cup Sugar
1 Cup Vinegar
1/2 tsp. Cinnamon
Some Pickling Spice
Bring to Boil

Beer Batter for Fish

1 Cup Flour
1 Cup Beer
1/2 tsp baking powder
Salt/Pepper

Mix and Let Stand

Pierogi

Dough:
2 Eggs well beaten
4 Cups Flour
1 Cup Sour Cream

Mix ingredients into a soft pliable dough. Roll like a jelly roll, wrap in wax paper, put in refrigerator until cold. Slice into 1/4" slices. Roll Dough out and fill.

Filling:
4 Cups dry Cottage Cheese
Salt
Egg
Chopped onion optional

Use about 1 tablespoon mixture per pierogi. Boil until floating. Fry in butter or lard until brown. Over with sugar and eat.
