Pumpkin Muffins

1-1/2 cups sifted flour
3/4 teas salt
2 teas baking powder
1 T sucaryl(sugr)
1/2 T cinnamon
1/2 teas nutmeg
1/4 cup shortening
1/3 cup raisins
1 egg slightly beaten
1/2 cup pumpkin
1/2 cup milk
Sift dry ingr. together, cut in shortening add raisins. combine egg with pumpkin and milk, add to flour mixture. Mix only to combine, do not beat, Fill muffin pans 2/3 full
Bake 375 deg for 20 to 25 min

Spice Apple Muffin

2 cups flour
4 teas baking powder
3/4 teas salt
1/2 teas cinnamon
1/4teas nutmeg
1/3 cup shortening
1-1/2 teas sucaryl (sugar)
1 egg
1 cup milk
3/4 cup chopped apples
sift together flour, baking powder, salt,cinnamon, and nutmeg. cream shortening add sugar continue beating til light and fluffy, add egg and beat. stir in milk and chopped apples, add flour mixture and stir just to moisten, do not beat
fill greased muffine tins 2/3 full
Bake375 degree for 20-25 min

Bisquick Blueberry Muffins

2 cups bisquick
4 T sugar
3/4 cup milk
1 egg
2 T soft shortening
1 cup blueberries
mix and put in muffin pan greased
Bake 400 degree about 20 min

Blueberry Muffins

1 cup fresh berries
2 cups sifted flour
1/3 cup sugar
3 teas baking powder
1 teas salt
1 egg well beaten
1 cup milk
1/4 cup melted shortening
mix flour,sugar, baking powder,and salt. combine milk and egg and melted shortening add all at once to flour mixture stir until liquid is absorbed. gentle fold in berries, fill greased muffin pan 2/3 full.
Bake 400 degree 20 min

Pierogi Dough Variations

2 c. flour -- or-- 4 c. flour
2 eggs -- or -- 3 eggs beaten
2 T. sour cream-- or-- 1/4 c. water
1 teas. butter -- or-- 2 T. butter
1/4 teas. salt -- or -- salt

Mix all 4 ingr. together Add flour to form a soft dough
Roll out to the size you want.
Use about 1 T. filling then fold dough (half moon shape) pinch sides

Filling variations
4 C dry cottage cheese--or-- 1 C. dry cottage cheese & 1 C Mashed potatoes

1 T butter --or-- 1 T. butter
1/2 c. fine chopped onion --or-- 1/2 c. fine chopped onion
1 egg --or-- 1 egg
Mix all ing. , put in dough by 1 T. and pinch sides
Cook in boiling water. Store or freeze.
Fry in butter when ready to eat.
