First Place Bucket List Chili Cook Off Chili by Darrin G.

Win 1st place in a chili cook off with more then 5 contestants. CHECK

Here is what won it.

  • 2 pounds ground beef chuck
  • 1 pound bulk Italian sausage
  • 3 (15 ounce) cans chili beans, drained
  • 1 (15 ounce) can chili beans in spicy sauce
  • 2 (28 ounce) cans diced tomatoes with juice
  • 1 (6 ounce) can tomato paste
  • 1 large yellow onion, chopped
  • 3 stalks celery, chopped
  • 1 green bell pepper, seeded and chopped
  • 1 red bell pepper, seeded and chopped
  • 2 green chile peppers, seeded and chopped
  • 1 tablespoon bacon bits
  • 4 cubes beef bouillon
  • 1/2 cup beer
  • 1/4 cup chili powder
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon minced garlic
  • 1 tablespoon dried oregano
  • 2 teaspoons ground cumin
  • 2 teaspoons hot pepper sauce (e.g. Tabasco™)
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon cayenne pepper
  • 1 teaspoon paprika
  • 1 teaspoon white sugar
  • 1 (10.5 ounce) bag corn chips such as Fritos®
  • 1 (8 ounce) package shredded Cheddar cheese

DIRECTIONS

  1. Heat a large stock pot over medium-high heat. Crumble the ground chuck and sausage into the hot pan, and cook until evenly browned. Drain off excess grease.
  2. Pour in the chili beans, spicy chili beans, diced tomatoes and tomato paste. Add the onion, celery, green and red bell peppers, chile peppers, bacon bits, bouillon, and beer. Season with chili powder, Worcestershire sauce, garlic, oregano, cumin, hot pepper sauce, basil, salt, pepper, cayenne, paprika, and sugar. Stir to blend, then cover and simmer over low heat for at least 2 hours, stirring occasionally.
  3. After 2 hours, taste, and adjust salt, pepper, and chili powder if necessary. The longer the chili simmers, the better it will taste. Remove from heat and serve, or refrigerate, and serve the next day.
  4. To serve, ladle into bowls, and top with corn chips and shredded Cheddar cheese.

Canned Cherry Pie

2 Cup Canned Sweetened Cherries
2 tsp Corn Starch
3 tsp Sugar
1/8 tsp Salt
1 Cup Cherry Juice

Drain cherries save juice. Mix cornstarch sugar and salt. Add Juice gradually. Cook slowly, till smooth. Add Cherries.

Pumpkin Chiffon Pie

1 Envelop unflavored Gelatin
1/2 Cup Brown Sugar firmly packed
1/2 tsp Salt
1/2 tsp Nutmeg
1/2 tsp Cinnamon
1/4 tsp Ginger
1 1/4 Cup Evaporated Milk
2 Eggs Separated
1 1/2 Cup Cooked or Canned Pumpkin
1/4 tsp Cream of Tartar
1/4 Cup Sugar
9 inch Baked Pie Shell

Mix gelatin, brown sugar, salt and spices in top of double boiler. Stir in evaporated milk and egg yolks, mix well. Place over boiling water and cook stirring occasionally until gelatin dissolves and mixture thickens slightly about 6 minutes. Remove from heat stir in pumpkin cool until mixture is chilled and mounds dropped from a spoon. Beat egg whites until foamy. Add cream of tartar and beat until stiff, but not dry.

Gradually add sugar and beat until stiff. Fold into pumpkin mixture, turn into prepared crust. Chill until firm if desired garnish with whipped cream and nutmeg.

Hot Peppers

1 Quart Vinegar
1 Quart Water
Hand Full of Salt
Some Spices -- Boil Together and Pour over Cleaned Peppers and Seal.

Easy Pumpkin Pie

Place 2 3/4 Cup (6-7oz package) of miniature Marshmallows, 1 Cup canned Pumpkin, 1 tsp. Pumpkin Spice and 1/4 tsp. salt in saucepan. Cook over low heat, stirring constantly until marshmallows are melted cool. Fold in 1 Cup heavy Cream whipped. Pour into baked 9 inch pie shell. Chill until firm.

Raisin Pie

2 Cups Raisin
2 Cup Water
1 Cup Sugar
2 Tbsp Corn Starch
3 Tbsp Water

Cook 5 Minutes

Graham Cracker Pie Crust

1 1/4 Cup Graham Cracker Crumbs
3 Tbsp Sugar
1/3 Cup Margarine.

Mix. Press in Pan.

Raspberry Ice Cream Pie

1 package Raspberry Jello
1/2 Cup Hot Water
2 Cup Ice Cream

Pour over raspberries in graham cracker shell crust.

Rice Pudding

2/3 Cup Minute Rice
2 3/4 Cup Milk
1/3 Cup Sugar
1 Tbsp Butter
1/2 tsp Salt
1/2 tsp Vanilla
1/2 tsp Nutmeg, Cinnamon, and Sugar

Combine minute rice, milk, sugar, butter, salt, vanilla and nutmeg in a greased 1 quart baking dish. Bake in 350 degrees for 1 hour. Stir after 15 minutes and again when pudding is done. Sprinkle with cinnamon and sugar. Place under broiler a few minutes to brown. Serve warm or chilled.

Peach Ambrosia

2 Cup sliced Peaches
1 Banana sliced
1 Tbsp Lemon Juice
2 Tbsp Sugar
1/3 Cup flaked or shredded Coconut

Combine first 4 ingredients and chill at least 30 minutes. Just before serving add coconut and spoon in sherbet glasses. Makes 4 servings.

This sounds terrible!

Strawberry or Raspberry Pie

2 10 oz packages of frozen Berries
1 3 oz package of flavored gelatin
1 Pie Shell

Thaw berries then drain of juice. Add enough water to juice to make 2 cups. Heat to near boiling. Add gelatin and stir until gelatin dissolves. Cool until resembles thickness of egg whites. Gently fold in berries and pour into baked shell. Chill until set. Serve with Whip Cream.
